1. MINESTRONE SOUP

Minestrone Soup is a healthy choice in winters to load up on veggies.

Hearty and full of flavour! 



Ingredients:

  • 2 teaspoons extra virgin olive oil
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 3 carrots, diced
  • 2 stalks of celery, diced
  • 200gm French beans, trimmed and cut into 1inch pieces
  • 1 zucchini, diced
  • 400 gm tomatoes
  • 2 cups water
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 teaspoons fresh thyme
  • 1 bay leaf
  • 1 tablespoon fresh basil
  • 2 drops of Herbostra Digestive Bitters
  • 1 tablespoon of sugar
  • Shredded parmesan cheese for serving

Prep Time: 45 mins

Method:

  1. Sauté chopped onion, garlic and celery in oil till golden brown.
  2. Add carrot, French beans, add tomato concussed tomatoes, pour in vegetable stock and simmer till all vegetables are boiled.
  3. Add seasonings and 2 drops Herbostra Digestive Bitters.
  4. Add 1 tsp sugar, fresh basil.
  5. Once it comes to boil pour in a soup bowl and finish with croutons and Parmesan cheese.

2. RUSSIAN SALAD 

An easy and delicious salad, which will add charm to any party with its colours and creamy flavour.



Ingredients:

  • 1 large Potato, peeled and cubed
  • 1 large Carrot, chopped
  • 10 French Beans, chopped
  • 1 cup Green Peas
  • ½ cup Mayonnaise
  • ¼ cup Cream
  • 1 tablespoon Mustard Sauce
  • 3 drops of Herbostra Digestive Bitters
  • Lemon juice to taste
  • Salt to taste
  • ½ tsp Sugar
  • Pepper to taste

Method:

  1. Boil cubes of carrot, French beans, potato, green peas. (While cooking the veggies, ensure that you do not over-cook because the vibrant colours and crispiness of the veggies have to be retained)
  2. Dressing: Mayonnaise, salt, pepper, sugar, mustard paste, lemon juice, sugar and Herbostra Digestive Bitters
  3. Mix all boiled vegetables with dressing and add pineapple. Garnish with parsley and pineapple and serve it chilled.

3. Penne Siciliana

Penne Siciliana is a quick toss pasta dish. Simple but delicious!



Ingredients:

  • 3 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 yellow and 1 green capsicum, cut into thin strips
  • 1 zucchini, sliced
  • 2 ripe tomatoes, peeled, seeded and chopped
  • 1 tbsp capers, rinsed and chopped
  • 40g (⅓ cup) black olives, pitted and sliced
  • 500g Penne, boiled
  • ¼ cup white wine
  • 3 drops of Herbostra Digestive Bitters
  • torn basil, to garnish
  • grated parmesan cheese, to serve

Prep Time: 30 mins

Method:

  1. Sauté chop onion, garlic, celery, add white wine, tomato concussed tomato, add capers, olives, seasoning, Herbostra Bitters.
  2. Once simmered till boiled. All boiled penne and mix well and serve. Garnish with basil and grated parmesan cheese.

4. CARAMELIZED NUTS

Caramelised nuts are sweet, crunchy and perfect to indulge with salads or dessert.



Ingredients:

  • 2 Tbsp. butter
  • 4 drops of Herbostra Digestive Bitters
  • 6 Tbsp. sugar
  • 1/2 tsp. cinnamon (optional)
  • 3 cups raw nuts--pecan or walnut halves, whole almonds or cashews (about 350 gms)

Servings: 6 Cups

Method:

  1. Heat a medium non-stick skillet/pan over medium heat and add nuts, sugar, butter, Herbostra Digestive Bitters and cinnamon. Stir constantly with a rubber heatproof spatula for approximately 5 minutes (less time if your nuts are chopped) until the nuts are evenly coated in the melted sugar/butter. (If using chopped nuts, don't chop them too small or they will burn.)
  2. Immediately transfer nuts to parchment paper and immediately separate using 2 forks OR let the nuts harden together and break them apart with your fingers once cooled. The nuts and coating will harden in 5-7 minutes.

5. ORANGE WALNUT SALAD

A tangy summery salad with a crunch of nuts.



Ingredients:

  • 1 Orange, peeled and sliced
  • 1 cup Iceberg lettuce, torn into bite-size pieces (iceberg, roman, loro roso)
  • 1 cup walnuts, cut olives
  • 1 cup Cherry tomato
  • Fresh mint leaves

    For dressing:

  • 1 Orange, peeled and sliced
  • 1/2 tablespoon Lemon juice
  • 2 tablespoon Olive Oil
  • 1 tablespoon Vinegar
  • 1/2 tablespoon Mustard paste
  • Salt & pepper, to taste
  • 2 to 3 tablespoons fresh orange juice
  • 4 drops of Herbostra Digestive Bitters

Method:

  1. 1. Mix lettuce, add olives, mint, walnut, slices of peeled orange, cherry tomato.

6. CHOCOLATE SAUCE

A lip-smacking chocolate sauce drizzled over Vanilla ice cream or strawberries.



Ingredients:

  • 50g Dark Chocolate (use at least 70% cocoa solids)
  • 25g butter
  • 125ml double cream
  • 1 tbsp caster sugar
  • 4 drops of Herbostra Digestive Bitters

Method:

  1. Break the chocolate into small even-sized pieces – so that it melts quickly and evenly. Add the pieces to a large heatproof bowl. Add a little boiling water to a saucepan and heat until it is just simmering.
  2. Place the bowl over the pan. Make sure that the water doesn’t boil or touch the base of the bowl, or the chocolate could get too hot and ‘seize’, becoming grainy and unworkable. Very gently heat for about 5 mins, stirring occasionally, until it is completely smooth. Remove from the heat and use as required.
  3. Heat all of the remaining ingredients in a small saucepan until evenly combined. Remove from the heat and stir through the melted chocolate. Serve warm over chocolate pudding, vanilla ice cream or with Strawberries.
